Siempre’s menu is a celebration of the unique culinary traditions, cocktails, and drinks from multiple regions of Mexico, with special emphasis on Puebla, Mexico City, Oaxaca, Jalisco, and Coastal Regions. An homage to the lively and vibrant flavors quintessential to cuisine in these areas, Siempre will take guests on a culinary journey from the desert to the sea with its collection of steak, seafood, ceviche’s, and more. The menu will highlight a signature Mole, featuring a recipe and authentic ingredients passed down from Chef Andres’ mother, rich in flavor & rooted in tradition.
● Cocktail Program: Created in collaboration with top Las Vegas mixologists, Siempre’s cocktail program is a creative display of show-stopping ways to feature mezcal, tequila, sotol and scotch within the framework of Mexican beverage lore. A margarita program consisting of six specialty margaritas will come to life with house-made, fresh squeezed juices. Additionally, Siempre will launch partnerships with notable tequila brands to bring exclusive tequilas and innovative promotions to Las Vegas guests.
● Authentic Mexican Beverage Program: In addition to carrying its own collection of Mexican Coke and Sprite consisting of natural sugars, Siempre will offer an in-depth Agua Fresca program. Made in-house, Siempre’s Agua Frescas will showcase refreshing, unfiltered fruit juices available in four flavors: hibiscus, cucumber, melon, and horchata.

Siempre’s culinary vision is spearheaded by AYYA Hospitality’s Head of Food and Beverage Chef Min Kim and Siempre’s Chef de Cuisine Román Andrés. Growing up in Puebla, Mexico, Chef Andrés began his culinary career in Las Vegas in 2016 working with Daniel Boulud and continued with notable Las Vegas destinations including Hell’s Kitchen, Alexxa’s and The Black Sheep. Bringing a wealth of knowledge of the country’s culinary innovation, Chef Andrés is dedicated to highlighting the rich tapestry of contemporary Mexican cuisine.
Siempre directly translated to English means, “Always”. In our name, Siempre is used as a salutation, meaning “yours always”. Our name holds multiple meanings, a term of endearment to our guests and a commitment to consistency to our core AYYA Hospitality Group values - giving our guests great service, a pinnacle product, and memorable experience.
